Two Meanings.
A spinning top. A slow-turning spit. Both are a trompo — and ours wears the crown.
Los Reyes del Trompo means “the kings of the spinning tops.” In a taquería, the trompo is also the vertical spit that al pastor is carved from. Playful in name, serious about the flame: layers of marinated pork turn, roast, and caramelize before being carved onto a warm tortilla.
